Subject: [PATCH] chore: raise minimum PHP version to 8.2 for 2.x release

Updates all configuration files and documentation to reflect the new PHP 8.2 minimum requirement for the 2.x branch. This allows the plugin to leverage modern PHP features whilst maintaining compatibility with currently supported PHP versions.

The CI workflow matrices have been adjusted to test against PHP 8.2, 8.3, and 8.4, removing support for PHP 7.4 and 8.1.
