Change the name ClassDefinitions to singular form to match naming convention

https://standards.oftrust.net/v1/ClassDefinitions/ differs from singular naming convention used with other directory names: Context and Vocabulary. Changing this to ClassDefinition for the directory and all of its references fixes this issue.
