A watch is a naturally better system to measure sun exposure. Apple Watch already uses sensors to register time in daylight in Apple health. This metric could be used to extrapolate and calculate vitamin D which the current integration does not do.
If not directly then a standalone app using the watch sensors could work also but if the data is already being collected then why reinvent the wheel.
