All 37 skill descriptions were single-line strings, causing Copilot CLI to render them as one long line in the skill hint. Converting to block scalar (description: |) with 78-char line wrapping makes hints readable. Co-authored-by: Copilot <223556219+Copilot@users.noreply.github.com>

Converts all 37 inline skill descriptions to block scalar (description: |) with 78-char wrapping so Copilot CLI renders readable multi-line hints. Also removes ds- prefix from data-scientist skill names and adds scripts/fix_skill_descriptions.py.
