Upgrade the Ollama engine base from v0.33.1 to v0.40.2.

Changes

• templates/ollama.yaml: engine image docker.io/ollama/ollama:0.33.1 -> 0.40.2 (amd64 + arm64 available upstream)
• Chart.yaml: appVersion 0.33.1 -> 0.40.2, chart version 1.3.17 -> 1.3.18
• OlaresManifest.yaml: metadata.version 1.3.17 -> 1.3.18, spec.versionName 0.33.1 -> 0.40.2
• upgradeDescription rewritten (manifest + en-US + zh-CN i18n) with a summary of every upstream release from v0.33.2 through v0.40.2

Notes

• v0.40.2 upgrades models pulled by older Ollama versions in the background on first run and keeps the pre-upgrade copy as a backup, so models under appCommon/ollama will temporarily use extra disk until upstream adds automatic cleanup.
• olares-cli chart lint ollamallmbasev3 passes.
