Add AMSKY01 and AMSKY02 driver documentation

Hi, I would like to add the AstroMeters AMSKY01 and AMSKY02 sky sensors to the list.

This PR adds their documentation and metadata, including basic product information, categories, technical details, and links. AMSKY01 documentation has also been updated for better clarity and consistency.

Please convert all the images to the .webp format.
Also, please fix the image sizes (300*300):

oh.. sorry. Now, there are no other image types.

It would be quite useful if this GitHub Action could also be run on forks of this repository. At the moment, it is limited to main and cannot be triggered manually. I think that it can be triggered from any branch or add manual_dispatch trigger.

Thanks a lot for pointing that out. JPG image ir removed, and the thumbnail size is reduced to 300×300.
