Brings docs and UI naming in line with the shipped features:

  • README: adds the Offline by default note (local Ollama + local voice, no API keys except Twilio); corrects the documented backend default from auto to ollama (3 spots); fixes the config path (~/.hermes/phone-agent~/.hermes-phone); reflects the new dashboard (phone dialpad, light/dark).
  • Branding: renames the user-facing Hermes Phone → Dialtone in the login page, transcript export, and menu bar app. Display strings only — ~/.hermes-phone install paths and com.hermes-phone.* service labels are unchanged (renaming those would orphan existing installs).
  • LICENSE: Software: field → Dialtone.

30 tests pass; "Hermes Agent"/"Hermes Gateway" backend references intentionally kept.
