docs: add window function documentation (TUMBLE, HOPPING, SESSION) - #7

Conversation
TUMBLE, HOPPING, and SESSION window functions work in streaming SQL GROUP BY clauses but were not documented in the README. Add a "Windowed aggregations" section with syntax examples and a reference table. Discovered and verified via checkpoint stress tests using the Python SDK (v0.12.0) — all three window types produce correct aggregation results with live streaming pipelines.
