Refactor configuration to use environment variables instead of a JSON config file. Add support for a persistent state file (default ~/.jmapbackup/state.json, override with JMAP_STATE_FILE or --state-file). Update README with new setup instructions and environment variable documentation. Remove legacy config file options and improve Docker usage instructions.
