Update model registries for current providers

Summary

• Add current OpenAI, Anthropic, Gemini, DeepSeek, and Mistral model IDs to PearAI model registries and add-model UI
• Update provider defaults for current hosted models
• Update config schema enums for the new model IDs

Verification

• npx prettier --write on touched files
• git diff --check
• config schema JSON parse check
• packages/llm-info: tsc --noEmit via core TypeScript/type roots

Notes

• core npm build is currently blocked by existing tsconfig/module alias and VS Code type-resolution issues outside these model registry files.
