`pastperfect_sanjose` mapper tweaks

• listify creator (each letter displays in its own line currently)
• there's a fallback rights note that displays in the UI when the contributor doesn't provide that info. In this case, it doesn't seem to be displaying at all. Is there a way to include that? If not, we can paste that into the registry.

subject is being mapped from <subject>, <searchterms>, and <people>

• Fine in this case: https://calisphere-stage.cdlib.org/item/936b891e749504100adfd9d7b480b8dc/
• But results in duplicates in this case: https://calisphere-stage.cdlib.org/item/905ed9c4614aff3c7c46d498ae01e875/
• (So I don't think we should worry about the duplication too much)
• But here's a request/question: Is there any way we can remove the pipes and listify the terms instead?
