docs: update sign-up screenshot to reflect WSO2 Identity Platform

Purpose

This PR updates the sign-up screenshot on the "Create your WSO2 Identity Platform account" page, which still showed outdated Asgardeo-only branding without the current UI (missing the EU/US region selector and updated WSO2 Identity Platform branding shown on the live signup page).
